Pure Maple Syrup

Every winter, while the garden sleeps, a group of hardy souls returns to the deep woods to tap the sugar maples. The Gould Farm community taps around 2000 trees each year, some on land in Tyringham and some on the Farm. This seasonal and highly labor intensive endeavor yields between 200 and 350 gallons of delicious syrup. It takes 40 gallons of sap to make a gallon of syrup! We bottle, label and offer about half our yield for sale, using the rest on the tables at the Roadside Café & Store and on our own dining room tables. Our attractively packaged bottles make wonderful gifts or you can enjoy the syrup with Roadside pancakes made from our mix. Also good for sweetening coffee, fruit compote or cereal.

Gould Farm Maple Dijon Vinaigrette

This mixture of dijon mustard, balsamic vinegar and our own maple syrup makes a sweet, tangy salad dressing or marinade for meat or vegetables. We make the dressing in small batches with no preservatives.

You can now prepare our famous hubcap size pancakes in your own home. We sell the pancake mix in both white and buckwheat. You get a heaping 2.5 lbs of dry mix and instructions in each attractive gift box. So make them large.
